Shrikhand Puri

If you've looked through all my recipes I'm sure you've come across Shrikhand a number of times. One of my top favourite desserts and I like to put a twist on them. This is a simple Shirkhand but piped into puris which are mainly used for chaats like Pani Puri. Here's what I did.

Ingredients:

500g Greek Yogurt

1/3 cup powdered sugar (or to taste)

Crushed cardamon seeds (4 cardamom pods)

Soaked saffron strands (around 10)


Method

The first step is to make hung curd where yogurt/curd has had its water removed. To do this you need to hang the yogurt in a cheese cloth and leave this to hang so the liquid drains out. I left mine to drain for 8 hours. Once you have your hung curd you can make Shrikhand. Add the hung curd to a bowl and add in the powdered sugar, crushed cardamon seeds and saffron then mix.

I add sugar by eye but if you are making this for the first time add sugar a little at a time and taste the mixture to get it to your preferred sweetness level. Then you can add in the other ingredients. I also make my own powdered sugar as I feel the starch in shop bought powdered sugar alters the texture. If you can't make your own use caster sugar as this will easily dissolve into the Shrikhand mixture. The cardamom seeds, you can either crush the seeds and keep them coarse or use fine cardamom powder. I prefer a coarse crush but I've grown up on the fine cardamom powder Shrikhand as my mum would make it using that. For the saffron I soak the saffron in a little bit of water or milk - around half a tsp. I do this to help activate the saffron and to keep my Shrikhand thick so it does not become runny.

Once everything is mixed your Shrikhand is ready to be chilled and eaten cold. However for this Shrikhand puri I added the Shrikhand into a piping bag and piped the Shirkhand into some Puris. I am using Puris used for pani puri here for a fun little twist. Shrikhand is traditionally served with the fried bread Puris - Puri recipe.

After I piped the Shrikhand into the puris I garnished them with slivered almonds and pistachios. This is a cute and adorable way to serve Shrikhand at a party. Enjoy!
