Puri is a fried-bread and come in a range of sizes. These are perfect with Indian vegetable curries, keri no ras (mango pulp), shrikhand or with some hot chai. This is how to make them.

Ingredients:
1 cup chapati flour
1 tbsp oil
Hot water
Oil for frying
Method
In a bowl add the oil into the chapati flour and mix until well combined.
Then add enough hot water to form a soft dough yet tight dough.
Add the water in stages to avoid adding too much. Then let the dough rest for 10 minutes.
Divide the dough into small portions and roll them out into 1mm small arounds. Around 3/4 inches in diameter. You can make bigger sized puris. The choice is yours.
Fry the rounds in hot oil until they puff up and become golden brown. All the puris might not puff up but having the oil hot will aid in them puffing up. Flip the puris over to brown on both sides.
You can also push the puris down into the hot oil with a spatula to also help them puff up. Once they are lightly golden allow them to drain on some kitchen paper to remove any excess oil.
