Kobi na Muthiya

Kobi na Muthiya are steamed dough dumplings made using cabbage (kobi). These are super easy to make and taste delicious. Perfect as a snack and also a great treat to store in the freezer.

Gujarati kobi na muthiya recipe cabbage dumplings

Ingredients:

Cabbage - 205g

3/4 cup chapati flour - 105g

1/4 cup gram flour - 25g

1 tsp leelo masalo (ginger, garlic, green chilli paste)

1/2 tsp red chilli powder

1/2 tsp turmeric powder

1 tsp dhana jeeru (coriander cumin powder)

Salt to taste

1 tbsp oil

Cold water


Tempering

1 tbsp oil

1 tsp mustards seeds

1 tsp sesame seeds


Method

The first step is to wash, shred and chop the cabbage finely. Add the chopped cabbage into a bowl followed by the chapati flour, gram flour, spices, salt and oil.

Mix everything well then add in cold water and mix until you form a dough which is slightly sticky.

Taking small amounts of the slighty sticky dough, shape the dough using the fists of your hand to form small small logs. Then place them in the steamer and steam cook for 25 minutes.

Too check these are cooked, slide a knife or toothpick into one of the dumplings and if it comes out clear then the dumplings are ready as is drizzled with a little oil or tempered.

To temper allow the dumplings to cool slightly as this will allow them to firm up and make it easier to cut them into slices. In a pan heat up some oil and once hot add in the mustard seeds.

Once the mustard seeds have stop spluttering add in the sesame seeds then the sliced dumplings. Sauté and crisp the dumplings slightly and then they are ready to eat. Enjoy!
