Nori Nem is a fasting day celebrated in Gujarat during the month of Shravan. It's celebrated on the ninth day of Shravan and in the South of Gujarat Vadhu is made which is sprouted pulses.

As it is celebrated on the ninth day, nine different pulses are used. Here I will be sharing the recipe that my family make. The pulses used vary from household to household.

Ingredients:

1/2 cup of pre mixed dried pulses. Mine was a mix of: Kala Chana (Black Chickpea) White Chana (White Chickpea) Kidney Bean Whole Green Mung Bean Whole Val (Field Bean)

White Chori (White Black eyed peas)

Red Chori (Red Black eye peas)

Tuvar (Pigeon Peas)

Vatana (Peas) 1 tablespoon of Whole Green Mung beans

2 cups water

2 garlic cloves - grated

1 inch piece ginger - grated

4 green chillies - roughly chopped Salt to taste 1 tsp oil

Method

Sprouting the dried pulses:

Pulses are sprouted separately. Bigger pulses together and smaller pulses together. Wash the dried pulses a few times or until the water is clear and leave them to soak over night or for 5 hours in clean water. Then drain and rinse the soaked pulses. Then wrap and tie in a clean cloth. Leave the pulses to sprout which can take around two days. Check the pulses each day to make sure the pulses don't become sticky. Once the pulses have sprouted rinse with clean water. Cooking the sprouted pulses (vadhu)

Larger pulses are cooked together and smaller pulses are cooked together as they take different timings to cook. As I only had a few large pulses I cooked them all together. Add the sprouted pulses into a pressure cooker along with the water, ginger, garlic green chilli, salt and oil.

Mix everything well until fully combined and pressure cook on a medium heat for 6 to 7 whistles.

Allow the pressure to release naturally. Once released open the pressure cooker. The Nori Nem Vadhu is ready. However if you feel there is too much water you can boil this further to reduce the amount of water.

The Nori Nem Vadhu is now ready to serve with Jowar na Rotla (Sorghum Chapati). Enjoy!
