Tamarind Chutney

Amli ni chutney is a Tamarind chutney which is Sweet, Spicy & Tangy and super easy to make.

Ingredients:
Dried Tamarind - 50g
Jaggery (Gor) - 50g 2 Medjool dates - 50g
1 1/2 cup water
1/2 tsp Kashmiri red chilli powder or to taste (red hot chilli powder if you like it spicy)
1/2 tsp salt or to taste
3 Star anise
Method
To a pan add the dried Tamarind, Jaggery, Dates and water. Chop the dates up so they soften and break away easily into the mixture. Heat on a medium heat and bring to a simmer.
As the mixture begins to simmer, break the dried tamarind up with the help of a spoon. As the mixture heats up the jaggery will melt and the dates will soften. Time: 4 to 5 minutes.
At this stage add in the Star anise, kashmiri red chilli powder and salt. Mix throughly. I initially added 1 cup of water but felt I needed to add more water so added another 1/2 cup at this stage.
I also added more jaggery (30g initially then another 20g at this stage) as I felt it needed more sweetness. Once I added more jaggery I allowed the mixture to simmer for 5 minutes.
After simmering for a further 5 mintues the mixture became thicker. At this stage I turned off the heat and poured the mixture into a metal sieve that was placed over a bowl.
Strain the mixture to get rid of the Star anise and Tamarind rind & seeds. Scrape the bottom of the sieve where the thick pulp will gather and mix this thick pulp throughly into the mixture.
Pour the chutney into a bottle and store in the fridge and enjoy whenever you need this tangy, sweet and spicy chutney. This chutney is thick and intense in flavour. If you're having this chutney with Samosas or Kachoris it's best to water down the chutney with a little water so the flavour is not too intense/over powering for the food and will be better for dipping.
