Orange Shrikhand

In my previous post I gave a Christmas twist to the Gujarati dessert Shrikhand. By flavouring it with Chocolate Orange. I thought I would also make a plain Orange flavoured Shrikhand with the chocolate. I came out tasting light and fresh with the orange addition. Here's how I made it.

Ingredients:
Shrikhand 600g hung curd (Made from 1kg greek style yogurt)
120g caster sugar
2 cardamon pods
Orange Shrikhand
300g Shrikhand
1 tsp orange essence - or to taste
Orange food colour - optional
Method
To 600g of hung curd I added in the caster sugar and crushed cardamon seeds from 2 pods. I mixed this until fully combined. To make the hung curd I hung 1kg of greek style yogurt in a cheese cloth to drain the water content. I left this to hang for 12 hours.
I used 2 cardamon pods for this Shrikhand for a subtle flavour. You can add more if you prefer.
Once fully combined I took half of the mixture out. To one half of the Shrikhand mixture I added in the orange essence and orange food colour and mixed until everything was fully combined.
Once fully combined you can taste this to see if you want to add any more orange essence for a stronger orange flavour. You can also add more food colour for a deeper colour.
The Orange Shrikand is ready to be served. Store this in the fridge and eat when you're in the mood for a creamy orange dessert. You could also garnish this with some orange peel. Enjoy!
