Sambharo

Sambharo is Gujarati stir-fried vegetables. I believe the most common type is made from cabbage, carrots and green chillies. I'm personally not a fan of this as I would always avoid it when they served this at Gujarati weddings. However with Fafda Jalebi breakfast I don't mind.

Ingredients:

1/2 carrot

2 green chillies

Some cabbage

1 tbsp oil

1/2 tsp mustard seeds

1/4 tsp turmeric powder

1/4 tsp salt or to taste


Method Thinly slice the carrots, green chillies and cabbage. You can use as much as you like for each.

In a pan heat up the oil and add in the mustard seeds. When the mustard seeds have stopped spluttering add in your thinly sliced vegetables followed by the turmeric powder and salt.

Stir-fry this on a high heat for around 5 minutes or until the cabbage has softened a little. The vegetables should still have a little bite to them.

Enjoy this with your meal on the side or with Gujarati farsan.
