Rajagara Sheero

Rajagara no Sheero is a Halwa recipe made from Rajgira/Amaranth flour. This can be eaten anytime but is mostly made during Hindu Fasts as it is Farali (permitted during fasting).

Ingredients:

1/2 cup Rajagira/Amaranth flour - 40g

1/4 cup melted ghee - 32g

Sugar - 40g to 50g (or to taste)

3/4 cup milk - 150ml

1/2 tsp cardamon powder

1 tbsp silvered almonds


Method

Firstly heat the milk until warm. To a pan add the melted ghee and heat until a little hot. Once hot add in the Rajagira flour and roast on a low heat. You can add more ghee (2tbsp) if you'd like.

After 7 to 10 minutes the flour should be roasted. The colour of the flour will brown slightly and the ghee will separate from the mixture. Stir occasionally so the flour does not burn.

Then it's time to add in the milk. Add the milk in stages and stir into the mixture. The flour will absorb the milk. Add the milk in stages so you can adjust the consistency to your prference.

Once the flour has absorbed the milk add in the sugar. The sugar will release some water and make the sheero smooth. Mix until the sugar has fully melted and absorbed by the flour.

Stir and cook on a medium to low heat until the mixture becomes smooth. Once smooth add in the cardamon powder and silvered almonds. Mix well until fully combined.

Once everything is mixed together your Rajagara Sheero is ready to serve and eat, hot or cold.
