Kesar pista kulfi

My Masi (mum's sister) bought me some kulfi moulds so I had to use them. I decided on making kulfi flavoured with saffron and pista as I love kesar pista ice cream that I'd eat when I visit India.

Ingredients:

1 cup full fat milk 1 cup cream 1/2 cup milk powder 1/2 cup sugar 2 tbsp powdered pistachios

1 tbsp slithered pistachios

Saffron strands (soaked in a little milk)

1/4 tsp yellow food colouring (optional)


Method

Mix the milk, cream, milk powder and sugar together in a pan and bring to a boil and simmer on a medium to low heat for 10 mintues. Stir occasionally so the mixture doesn't burn in the pan.

While the mixture simmers. Soak a few saffron strands in a little milk.

After 10 minutes of the mixture simmering. Turn off the heat and take the pan off the stove. Add in the pistachio powder, pistachio slithers, the soaked saffron and the yellow food colouring.

 Mix everything really well then leave the mixture to cool down to room temperature.

Once the mixture has cooled down pour the mixture into ice cream moulds. Put them in the freezer to set overnight or for 12 hours.

To de-mould the kulfi leave them outside for a few mintues or place the moulds in some warm water for a couple of seconds.

Then pull out the kulfi and it's ready to enjoy! You can garnish this with some more pistachios.
