Instant Kopra Pak

This is a quick and easy recipe to make kopra pak also called coconut barfi, a soft coconut flavoured milk fudge. These are perfect for Diwali or any other festive occasion.

Ingredients: 1 tsp melted ghee
1/2 cup condensed milk
1 cup desiccated coconut
Cardamon powder to taste - optional
Food colour - optional
Method
In a pan mix together melted ghee, condensed milk and desiccated coconut. Cook on a low to medium heat while stirring and the mixture should come together. Do not dry out the mixture otherwise the barfi will not turn out soft.
Add a little cardamon powder and mix then split the mixture into two parts. Add one part to a ghee greased plate/thali and spread evenly. Add food colour to the other half of the mixture and mix till fully combined.
Apply the coloured mixture of top of the first mixture and spread evenly. Decorate the top if you like, I added edible silver leaf flakes.
Allow to cool and set, then cut in pieces. These can also be rolled out into balls. These kopra pak pieces will be soft but will harden over a few days.
