Cheesecake style shrikhand

I absolutely love shrikhand esepcially when the days are hot and making it. I find making a thick shrikhand taste similar to cheesecake and thought I'd create a cheesecake style shrikhand. I made a deconstructed version for my family during the Easter bank holiday and they loved it.

Ingredients:
Butter
Ground digestive biscuits
Cardamon shrikhand
Blackcurrant curd
Cardamon shrikhand:
1.5kg Greek style yogurt - hung for 10 hours to remove the liquid
Caster sugar to taste
Crushed cardamom seeds from 4 pods
Method
I just eyeballed the amounts for when I assembled the shrikhand in a ramekin dish. I added ground digestive biscuits to some melted butter and flattened this out on the bottom of a ramekin dish.
I then added a thick layer of cardamom shrikhand. I lightly spiced this shrikhand with cardamom just so it wouldn't dominante the other flavours in this cheesecake shrikhand. I would add more cardamom if I was making a cardamom only shrikhand.
After smoothing out the shirkhand layer I added a thin layer of blackcurrant curd which was tart. This complimented well with the other flavours. The cheesecake style shrikhand is ready to eat! I didn't have a large amount of ramekins so when I served this for my relatives I sprinkled the digestive biscuit crumbs and blackcurrant curd on top of the cardamom shirkhand in a bowl.
This is a lovely twist on Shrikhand and I can't wait to try out other combinations.
