Biscoff Barfi

Here I will share a quick and easy recipe on how to make Biscoff Barfi, perfect for any occasion.

Indian mithai barfi recipe using lotus biscoff biscuits raksha bandhaa special

Ingredients:

1 tsp melted ghee

1 cup milk powder - 95g

1/2 cup double cream - 105g

1/2 cup biscoff crumbs - 47g (6 ground lotus biscoff biscuits)

1/4 cup sugar - 40g

Ground cardamon from 2-3 cardamon pods


Method

Add the ghee into a pan on medium heat followed by the milk powder and double cream. Mix everything well until the mixture becomes smooth. Mix continously as you do not want the mixture to burn.

The mixture should thicken as it gets warm - Around 2 minutes.

Once the mixture feels slightly thick add in the sugar. The sugar will melt and make the mixture become less thick.

Mix continously to allow the sugar to completely melt into the mixture. Cook for a further 2 mintues to allow the mixture to thicken slightly. It should resemble melted chocolate.

Add in the cardamon powder and mix well. Once the cardamon powder is evenly distributed and the mixture has thicken slightly (around 1 minute cooking time) add in the biscoff biscuit crumbs.

Mix the biscuit crumbs well into the mixture which will further thicken the mixture. Spread the mixture into a greased dish and leave to cool for 2 hours. Once cool cut the barfi into your desired shape and size. The barfi will be slightly soft at this stage but set nicely the following day.

Store in an air tight container and enjoy these on any festivities. Perfect for a biscoff lover!
