Chevti Daar

Chevti daar is a Gujarati style lentil curry made from 4 types of lentils . Everyone has their own choice of lentils. For this recipe I will be using mug ni daar (skinned and split mung beans), masoor daal (red lentil), urad ni daar (skinned and split black gram) and chana ni daar (split bengal gram). This is another recipe I have grown up eating and here is how to make it.

Gujarati surti chevti daal daar recipe

Ingredients:

Mug ni daar (skinned split mung bean) - 40g

Masoor daal (red lentil) - 20g

Urad ni daar (skinned split black gram) - 40g

Chana ni daar (split bengal gram) - 12g

2 cups of water then another 1/4 cup water

1 tsp oil

Masala:

3 tbsp oil

1/2 tsp mustard seeds

1/2 tsp cumin seeds

1/2 tsp asafoetida

3 dried red chillies

3 garlic cloves grated

1 tsp green masala (ginger garlic green chilli paste)

1 tsp red chilli powder

1/2 tsp turmeric powder

1 tsp dhana jeeru (coriander cumin powder mix)

Salt to taste

1/4 tsp garam masala

Coriander leaves to garnish


Method

The first step is to wash your lentils in water 3 to 4 times or until the water is clear.

Once washed add the lentils into a pressure cooker along with 2 cups of water and 1 tsp of oil. Pressure cook on medium heat for 4 whistles and allow to the pressure to release. Once the pressure has released open the pressure cooker and mix in 1/4 cup of water.

In a pan heat up some oil and once hot add in the mustard seeds. Once they have stopped spluttering add in the cumin seeds. Once browned add in the asafoetida and saute for a minute.

Then add in the grated garlic, green masala and dried red chillies. Saute for 1 to 2 mintues until the garlic is soft. You do not want to brown the garlic. Then it's time to add the spices.

Add in the red chilli powder, turmeric powder, dhana jeeru (coriander cumin powder mix) and salt. Saute for a few mintues or until you see the oil seperate. You do not want to burn the spices.

Then add in the pressure cooked lentil mixture and stir in. Once fully combined bring to a boil.

Then add in the garam masala and coriander leaves and mix well.

Chevti daal is now ready to serve and eat. This goes perfect with both chapatis and white rice.
